Mini BLTs with Seductive's Heirloom Tomato Jam

Makes 24

8 slices, thick cut, applewood smoked bacon
1/2 cup maple syrup
2 Tablespoons Dijon mustard
1 Tablespoon dark brown sugar
Pinch of cayenne
3 sprigs fresh thyme
12 slices sourdough bread
1 9oz jar Heirloom Tomato Jam

Preheat oven to 400 degrees.

In a small bowl, mix together the maple syrup, mustard, brown sugar and cayenne. Stir until sugar is completely dissolved. Pinch leaves from thyme and stir into glaze.

Line a baking sheet with foil, set a rack on top of foil and lay bacon out so pieces are not overlapping. Brush glaze over bacon, and bake for 10 minutes. Turn bacon, and bake another 15 minutes, until bacon is crispy. Set aside to cool slightly. Cut each slice into three piece squares.

Turn on broiler:
Take a square cookie cutter and cut two perfect squares from each slice of sourdough bread. Drizzle with oil, sprinkle with sea salt and black pepper. Place under broiler until toasted.

To assemble:
On a large platter, build your mini BLT's starting with toasted bread, one piece of bacon, a dollop of heirloom jam, and top with microgreens.
